Yellow Cake Cookie

1: Cream together soft butter, mild oil, and granulated sugar for 3 minutes.

2: Add room temperature eggs and cake batter extract, mix well.

3: In a separate bowl, combine AP flour, corn starch, baking soda, baking powder, and salt.

4: Gradually add the dry ingredients to the wet mixture.

5: Scoop out 1 or 2 oz cookie dough balls and place them on a cookie sheet.

6: Cover and chill in the fridge for at least 30 minutes.

7: Preheat oven to 350°F.

8: Place 8 cookies on a sheet and bake for 8-10 minutes for 1 oz cookies or 10-12 minutes for 2 oz cookies.

9: The cookies are done when the top cracks and turns from glossy to flat.

10: Let cool completely before adding the chocolate fudge frosting.

11: For the frosting, melt butter in the microwave in 30-second increments until fully melted.

12: Sift in unsweetened cocoa powder and 1 cup of powdered sugar, and whisk until combined.

13: Sift in the remaining powdered sugar 1 cup at a time, and whisk well.

14: Add in heavy whipping cream and whisk until smooth.

15: Frost the cookies once they are cooked and enjoy!
