Peanut Butter Cookies with Marshmallows and Peanut Butter Cups

Preheat oven to 350°F. To a large bowl, cream together the melted butter, granulated sugar, brown sugar, and creamy peanut butter until smooth. Add in one egg and vanilla and mix together again. Add the flour, salt, baking soda, and baking powder directly into the bowl, stirring gently with a rubber spatula until combined. Line two cookie sheets with parchment paper. Scoop out 2-ounce cookie dough balls and place on a cookie sheet. Gently press cookies into a disk shape and top each with four mini marshmallows in the center. Fold the dough around the marshmallows to cover them, then press down slightly into a disk shape again. These cookies don't spread much, so you want to make them a little flat before baking. Chop up 4-6 peanut butter cups and sprinkle on top of each cookie. Place 8 cookies on each cookie sheet. Bake at 350°F for 10 minutes. Allow to cool slightly, then enjoy.
