Stand Out Mother’s Day Dessert: Roasted Triple Berry Jam Crumble

Roasted Berry Jam Recipe:

Place all ingredients (strawberries, berry mix, granulated sugar, lemon zest, corn starch, salt) into a 9x13 pan. Mix it well and roast in the oven at 400°F for 30 minutes, stirring every ten minutes. After 30 minutes, pull it out of the oven and let it cool to room temperature. It will thicken as it cools. 

For the cookie crumble:

Combine flour, oats, brown sugar, salt, baking powder, and melted butter. Place half the cookie crumble in an 8x8 pan and press in firmly. Bake for 10 minutes at 350°F. Top with half of the cooled roasted berry jam filling and then with the remaining cookie crumble. Bake again for 30 minutes. Allow to cool for 10 minutes before topping with vanilla ice cream and enjoy. The remaining jam can be served as desired, lasts in the fridge for 2 weeks, and freezer for 6 months.
