Small Batch Fruit Cheesecake

1: Preheat the oven to 350°F.

2: In a mixing bowl, beat together the cream cheese, Greek yogurt, granulated sugar, egg, egg yolk, vanilla, and salt until smooth.

3: For the crust, mix together the ground graham crackers, brown sugar, and melted butter.

4: Press the crust mixture into the bottom of a 6” spring form pan.

5: Pour the cheesecake filling over the crust.

6: Bake in a water bath at 350°F for 45 minutes.

7: After baking, turn off the oven and let the cheesecake cool inside with the door propped open for 1 hour.

8: Remove the cheesecake from the oven and release the spring form pan.

9: Let cool completely in the fridge for about 3 hours before slicing and serving.
