Holiday Cake

In a large bowl, mix all dry ingredients (flour, sugar, cocoa powder, baking soda, baking powder, salt) together and set aside.

In a separate bowl, combine buttermilk, hot water, vegetable oil, sugar, and peppermint extract. Mix until smooth and add to the dry ingredients.

Using a whisk, hand mixer, or stand mixer, beat the batter on low until fully incorporated. Toss in half a cup of semi sweet chocolate chips and give a slight mix.

Grease your Bundt pan with spray, oil, or butter, ensuring it gets into all cracks. Dust the pan with cocoa powder.

Pour the batter into the prepared pan, filling it about 3/4 full.

Bake at 350°F for 40 to 50 minutes or until a toothpick comes out with soft crumbs.

Let the cake cool in the pan for 10 minutes, then turnover to release it and let it cool for another 20 minutes before topping with ganache.

For the ganache, add chocolate chips to a medium heat-safe bowl. Simmer the heavy whipping cream in a saucepan until it comes to a simmer.

Pour the hot cream over the chocolate chips and mix until smooth.
